As a user of low carb ice creams, I’ve had my share of crumbly samples with poor mouth feel and off flavors. Accordingly, it was a pleasure to find Sola Vanilla Bean ice cream available on the internet. The vanilla bean flavor from Sola has great scoopability right out of the freezer, a good balance of sweetness, and a rich, custardy vanilla taste even though it contains no eggs.
As a Philadelphia style (no eggs) formulation, the ice cream was milky white rather than creamy looking and appeared to have higher than average overrun (air content) according to the label. The presence of the sugar alcohols in this Sola product had no effect on my digestive system.
